If you have never used a ceramic blade you have no idea what you are missing. The Kyocera 5" Slicing Knife is the epitome of sharpness and its blade will not react with food. Simply clean with warm soapy water and store. The blade does not require sharpening and shouldn't need sharpening for up to 5 years. When it is time to resharpen, send your knife to Kyocera and they will do it for you.
